Using a UV Filter on 300mm lens any detriment to the image

You'll get different opinions from different people, but in my experience adding a filter does have a noticeable effect on the image quality.

This site (http://www.vanwalree.com/optics/filterflare.html) shows what can happen with a filter. The flare shows up very well, because it's light against dark. In daylight shooting you'll get the same effect, but it'll be all of the bright areas (like the sky) reflecting on the not-so-bright areas. This won't produce obvious light patches, but it will reduce the contrast of your images.

Putting more glass in front of the sensor is bound to affect the IQ.
If you do need to use one buy the best quality you can afford.

Thanks guys I think I will just use the hood unless there's flying bits etc

Sometimes I use a skylight filter sometimes not. For flight shots it comes of where I think sharpness is critical. Otherwise the filter stays on because keeping the object lens free of scratches (for me) is critical.

Use the hood and just be a bit careful.
