There are at least two birdfinding guides for the Canaries in general. Have not been to Lanzarote myself so can't help you any further.

I stayed in Costa Teguise in October 2004. In my opinion the best site to watch Houbara Bustard is "El Jable de Famara", a plain where is easy watch. For watch acuatic birds (Limicolas in spain), there are two good sites. Salinas de Janubio and Salinas de los Cocoteros.
