Mallard, swans, geese, grey heron, blackbird - these are some of the easiest.

The hardest? The ones you can never find! Seriously, anything small that sits deep in trees, also the small stuff that never seems to land, such as swift, martins etc.

Easiest; Gulls, Heron, Turnstone, Coot,
Hardest; swift, shearwaters, goldcrest, goshawk, quail

This rather depends on how you read the question. There are some very common and not too fast moving birds which are easy to capture but hard to get a really good shot of - eg. simple to get photos of coots and cormorants but I'm still waiting to get one I'm pleased with. Swallows and Swifts? I just get dizzy trying!

For me personally :

Easiest - Geese , House Sparrow , Heron , Chickadee and Magpie
Hardest - Red-tailed Hawk , Most Warblers ! , Ruby-crowned and Golden-crowned Kinglet , Sora .
