A great behavioural video of these Coots! I've never noticed the claws at the end of their toes before. Interesting that they seem to peck at or in between stones--I haven't seen that either. I wonder what happened to the birds with flat crown (different head shape?, different feather alignment?, loss of feathers?). Your video reminds me of a ringed bird I saw in May 2022 in Warsaw, which was recorded in Verona in October that year. Some of the local Coots here are resident, others are rather close-distance migrants (Prague, Budapest), but I didn't expect to see one that overwinters in Verona.
