    Entire books have been written on that subject (are species individuals / classes / something in between / something else), with no universal consensus being reached so far, I'm afraid.

    Of course a proper noun (the name of a person, continent, sea, river, etc.) within a bird name is always capitalized. (But beware that French, like German but unlike English, does not capitalize proper adjectives.) Besides this, what gets capitalized are (1) the first word of the name and (2)...
