I just picked up the Nikon ed82a with the ds 30x. Anyway I can use this to digiscope with my canon 5d Mark 2?

Yes possible with a smaller lens and also digiscoping adapter by Nikon or other 3rd party brands

Yes possible. Try hand holding the camera with the lens onto the eyepiece and see the level of vignetting if acceptable or not. If the dark circle (vignetting) is small, that would be ok for digiscoping
