I have never hired a guide for birding before, but I have contacted the Mauritian Wildlife Foundation and am working on arranging a guide for several hours one day for wildlife in general, but some focus on the birds. Not going to be there for a few more weeks, so I can't actually tell you what it will consist of or if it will even be worthwhile.
