Depends a lot if you use a straight or an angeled scope.
If straight you need to take your eye-level and also take into account the scope (ca. 5 cm from bottom to ocular) and the tripod head (generally around 10 cm).
If you have an angled, you can take around 20 cm or more off these values.

Radim,
For a straight scope you would need a tripod height of around 160 cm, for an angled scope about 130 cm.
If you need to extend the centre column a little to achieve these heights there would not be any significant loss of stability.
