I shoot in JPEG (going to move to RAW but haven't)....what size image does anyone use? 4872 x 2848. Anyone else?
 
I always use the maximum size unless I am only shooting for web use only such as Ebay. There really is no point imo in having for example a 10mp camera and only using 5mp. The real advantage for having high mp is the amount of cropping that can be done, (in addition to greater potential for enlargement), especially useful for bird photography.

I would also use the highest quality setting. There is little point in throwing away information at the capture stage.

Of course, shooting in Raw, or Raw+jpg, gives the most flexibility and ability to rescue shots with white balance and exposure problems, and potentially to arrive at the best picture.
