That's a juvenile Wheatear Oenanthe oenanthe, not all bird books illustrate juveniles but the mottled grey tones of this bird are very typical of juvenile Wheatears until they moult in browner feathers in a few weeks time.

I thought this was a wheatear but as you say the bird guides do not always show juveniles. Thanks
