I am seeking help on the best settings for my set up
I have a samsung NV15 camera, using opticron camera and scope adaptors, attached to a Opticron HR80 GA ED / 45 scope
Can anyone help with advice

I don't know this particular camera but the beauty of this digital age is that you can experiment without wasting money. Set yourself up in a hide at your local reserve and work through the options.

I found visiting my local reserve was more fun and motivating than using inanimate objects at home.
 
Some general settings to start w/:

Aperture-priority
ISO 100 to 200
Center-weighted averaging metering
Continuous-frame shooting
Auto-white balance
Sharpening-Normal
Center-weighted or spot-focusing

If you have vignetting at the lowest zoom settings make sure that the vignette circle is as sharp as possible. Start at the lowest zoom settings and get good images before increasing 'camera' zoom.
