Starling behaviour

In southern Spain last week I saw a loose flock of maybe 100 starlings apparently catching insects in the air, flying with lots of gliding, almost like bee-eaters. Whenever they came close enough they looked quite spotted so I think they were regular starlings, not spotless ones.

I've never seen this behaviour before. In the UK starlings always seem to feed on the ground. Is the behaviour I saw simply because there are more sizeable insects in Spain, making feeding like this worthwhile? Or do they actually do this in the UK? Do both common and spotless starlings behave like this?

This is common Starling behaviour in the UK too. If there is an ant emergence, or in the spring, they often fly-catch like this and do remind me of bee-eaters too.
