I've moved your thread to the Greek section of the Forum and hopefully you'll get some suggestions :)
 
Greece is one of the main crossroads of long migratory bird routes from north to south, and you're right, there are many places where you can see migratory birds well. I won't tell you the exact names of the places, but I have small guided tours to Greece (I proofread all the tips) and can share. Argiropelekanos and Rodopelakano are considered ornithological sites and are the best places to watch birds. As far as I remember, we booked a hiking route through Mergus and enjoyed the best views of these natural wonders
