This grebe is giving a demonstration in how to properly swallow a Crayfish. This is probably either the Signal Crayfish (Pacifastacus leniusculus) or maybe the Red Swamp Crayfish (Procambarus clarkii). Both are invasive and introduced to California.

It always amazes me the size of item grebes can swallow Joe. He had a bit of a battle with it didn't he though LOL

Signal Crayfish have been introduced to the UK too, and the virus they carry is killing off our native ones. Sad.
