I was thinking more along the lines of Shining or Beautiful. Its hard to tell the true colours on this bird; it largely looks like white underparts (i.e. female Shining), but there is some yellow on the belly (i.e. Beautiful). Female Variable lacks a supercilium (according to Birds of the Horn of Africa).

With that bill and jizz you can rule out pretty much any Cinnyris sunbird. This is a large female Nectarinia and Eritrea offers only one species in that genus: Tacazze sunbird, see https://www.flickr.com/photos/44614344@N07/8325042217
I had a look at that too, but iI thought that the above bird was not yellow enough. Now that you say it I can see it, especially the head.
