just for the info, there is now 'relatively' cheap accomodation on Cayo Guillermo:
Islazul Villa Gregorio. Still 70 euro / night for a double, but compared to other offers that are ruining the beach, it's a bargain.
(disclaimer: ofcourse every hotel on the cayos is ruining the xerophytic vegetation, but on a smaller scale than those mega hotels with posh pools etc right at the beach).
