I make my own nectar with sugar and water and have one question. After I make a batch of nectar, should I keep it refrigerated or can it be left at room temp on the kitchen counter? I have been keeping it in the fridge to help keep it fresh and from spoiling too quickly. I don't go through as much nectar as some of you lucky ones do. I read recently that keeping nectar in the fridge could cause the sugar to crystalize.
