Recently, I have started to look into this again but I recently splashed out on a Zeiss scope so my budget is a bit lower. I am planning to buy a Nikon 70-300mm f4.5-6.3 G ED DX AF-P VR lens as previously mentioned but a Nikon D7200 is a bit too pricey for me - coming in at anything between £400-£500 second hand. I will be looking out for a Nikon D7100 on eBay and other sites for around £300 but finding a decent quality one (still second hand) for that price will be hard. The D5600, D5500 or D7100 are possible cheaper options, what are everyone's views on these (particularly the 5600 or 5500 which haven't been discussed much on here)?

The D5500 will work with that lens if you have the latest firmware. the AF-P series is not fully compatible with older Nikons. The D5300+ or D3300+ or D7100+ will all work with it with the newest firmware.
The main difference between the d5600/d5500 and d7100 is the d7100 6 FPS vs 5 FPS (or 4 FPS if in raw mode), has U1/U2 memory recall modes, and has more buttons & dials to reduce the need to dive into the menus.
The D5600 is 24MP @ 5 FPS (4 FPS w/ 14-bit raw). No U1/U2 memory modes. No AA filter, so you can get very sharp photos, even when cropping a lot. Compared the the D7xxx series, the D5xxx has fewer dials so you need to go into the menu system more often for things like ISO and probably for shutter release mode, AF mode, etc. I'm not sure of the exact list, but there are very few buttons on the camera. It's a light, compact camera that will take excellent photos.
The D5500 is the same as the D5600 except it does not have bluetooth / NFC. They will take the same pictures. I think this would be an excellent first DSLR.
The D7100 is 24 MP @ 6 FPS. Has U1/U2 memory modes on dials so you can switch between, say Birds mode and People mode. In the 1.3x crop mode (2x overall) it climbs to 7 FPS. It has a pretty deep buffer, so you can fire off a big burst (I don't remember the exact number).
