My partner and I will be visiting Kenting National Park in late November.

Do you have any suggestions on birding there or other nature activities?

Thanks,
Marc

In late November you'll be past the raptor migration, which is the big birding draw in Kenting, but the wintering species will be in full force (shorebirds, ducks, raptors, thrushes), plus the year round birds. You'll need a car or a driver to get around easily - there are a few spots accessible by bus, but not all. Traffic around Kenting is not bad (unlike trying to drive in the cities and mountains in Taiwan).

Taiwan has pretty good eBird coverage, which can give you an idea of good places to visit and what species are around - Longluan Lake and Kenting NP--Sheding Lingxiao Pavilion (Raptors Observation Spot) are the most active species wise, but Kenting NP--Eluanbi Park is nice for a walk and the southernmost tip of Taiwan. There's also the National Museum of Marine Biology and Aquarium in the same area. The water is pretty warm, so if the weather is decent swimming is an option.

Oh, and there is now an excellent English language birding field guide for Taiwan.
