Which species is this? Is from Jemma Valley, Ethiopia, January 2019.

The extent of the black bib, only fits Cyprus Wheatear?

Maybe a Desert Wheatear (1st winter or female)? In the second image you can see a little bit of a pale inner-wing panel. Reddish-brown ear coverts fits as well.

Don't you think that the dark throat is too extensive for Desert?

bases of tail feathers clearly white visible on undertail, no Desert, Cyprus seems a good call
