I was Talking about bird watching to a friend of mine, and he suggested that we call it bird stalking, so i told him that i would ask you guys (And gals) what you thought of his idea. so let me know what I should tell him

Sounds more like my activities out on a Saturday night. The idea of being called stalker doesn't really appeal to me.
 
It ain't a term that's going to catch on that's for sure! Depending on your fieldcraft skills, you could be anything from stalker to frightener, scarer or flusher!
