I am attending a work conference in mid February at the Grande Lakes resort. I hope to find some time for birding. Am I likely to see much at that time of year? I may have half a day free to travel for birding - all recommendations gratefully received.

Perhaps Orlando Wetlands Park, which offers free tram tours.
If you're interested in the tram tour and you have limited time and specific day, you may want to contact them to make arrangements.
Many egrets, herons can be easily spotted and photographed.
Other FL specialities that may be spotted included Purple Gallinules, Limpkins.

If you are not familiar with Florida birds, you will certainly be kept busy. You must keep binoculars with you in the car as you never know when something will fly into view. There are a couple of nice parks in the Disney vicinity that will be teaming with birds. I visit the Oakland Nature Preserve just 30 minutes from Disney...there is ample to see!

Just to report back that there was a remarkable wealth of waterbirds around the lakes and swamps in the hotel grounds themselves and I managed to squeeze in just under 5 hours on Merritt Island yesterday before my flight home - what a fantastic place. Loved the Florida Scrub Jays, let alone the hordes of Roseate Spoonbills. Plenty of waders too, though not sure I nailed the IDs of the various peeps. I look forward to a return visit.
