Can't go wrong You won't go wrong by going to Gambia (we stayed twice and preferred Senegambia) or Sri Lanka (we stayed at Ranweili and traveled around) but you could also think about Coconut Grove Resort in Elmina in Ghana great birding round hotel and attached golf course and only 45 minutes to Kakum and great rainforest birding including canopy walkway and if you wanted to make full day of it you could get to Bokro Forest for Picatharthes although a very long day (would be worth getting guided day with Ashanti). Other option I would recommend is Sheraton Resort in Palawan - near Peacock Pheasant site and with it's own ATV and farm area which is great for endemics. I would also support Yucatan either beach road to Tulum we stayed in one of the Palace all inclusive hotels with stay at Chichen Itza.
