Ok. Not sure how far you are prepared to travel but the Messina strait is very good for migration. To the south there is Lentini Lake but not sure if you can access it these days.
I have been twice but stayed in Trapani both times, which is a long way from Taormina. There is a decent range of birdlife there, particularly on the saltpans.

The glass is half full, but the bottle is empty.
Mid May might be pretty close to the end of it but you should still see very good birds. A good wetland reserve is Saline di Priolo (search for Priolo and it's the wetlands nearby).
