    100-400: IS on with beanbag??

Andy, I leave IS on for most any shot whether on tripod, beanbag, etc. Mainly because I am too daff to remember to turn it off.8-P

    Upgrade from Nikon/Sigma to Canon/Canon

I had a Nikon D50 for a little while then a D200 and enjoyed both of them. I switched to Canon mainly because of their lenses and started with a 40d which I liked better than the Nikon bodies. You should love your indicated combo especially with a 50d which adds some nice upgrades over the...

    Waterproofing

You can add the 70-200mm f/4L IS to that list also. At least, according to Canon's website.

    canon lens cleaning

I have filters on my two shorter lenses and clean them with blower, lenspen, or paper/fluid depending on how dirty. Same with my 500mm which of course doesn't have an external filter.

    1.4 or 2x teleconverters

+1 on Roy's suggestion. I have the same lens and use the 1.4x on it. It is a very nice combo.

    Image stabilizer noise

I guess that I am lucky. Both my 70-200mm f4 and 500mm lenses have very nice manners as far as IS noise. Hardly noticeable, especially the 500mm.

    kenko or canon tc

I used a Kenko Pro 300 1.4x with my now departed Nikon kit and it worked very well including with the 80-400mm VR lens. But I use the Canon model with my current kit so cannot speak for the Kenko/Canon version.

    Canon 500mm f4

+1 on mode 1. I always have the IS on. No issues with BIF either.
