Ok so I set to Manual mode. I set my exposure to 1/1000. Fine. Next time I shoot the exposure time has altered??? It is always dropping to a longer exposure and not always the same value. So I have to check to see if my exposure has altered before taking the next shot??? Any ideas?
 
What happens in between shots? The dials on Canon cameras are generally vulnerable to being knocked if on a sling or put into/taken out of soft bags. Check your settings as a matter of course is the only real solution.

Have you altered the exposure compensation (red menu) without realising?
 
To be honest, I don't think it does. For odd exposure behaviour it's always worth checking but it's probably not your problem in this case.
