Can anyone recommend a quality digiscoping adapter for use with binoculars?

I’m not sure if this helps but it’s someone you can call an/or ask via e-mail.
I used the U.K. arm of this company for my iPhone 13 digiscoping stuff, it’s entirely possible that the size of the eyepiece on your binoculars could coincide with the size of the eyepiece of one of their standard eyepiece fittings.

They make to measure, just tell them which phone and which binocular. The same case can take either adaptor, for scope or bins. I have both.
