Best kit for Digiscoping (2 Viewers)

I assume this question has been asked a million times, so apologies for asking it again. Just sold my 500mm lens and now want to get a scope/adapter/camera. I’m a newbie to digiscoping so looking for expert advice. I have a good budget available.

iPhone or DSLR ? I have a spare Canon 7D mkii. I even have a Canon R5 I could use. My understanding is that Swarovski ATX 80 with TLS APO

Any advice/info/feedback welcome
